Electric to Gas Cooking

Good Afternoon! I am slowly making my way thur all the various boards here ... another transition in my life is switching from an electric stove to a gas stove after 3 decades. Both times
(1974 & 1978) I had a gas stove (both rentals) they both had gas leaks and the one in '74, I was pregnant. I also am always afraid of gas blowing up. NONETHELESS, I have made the switch to using a gas stove ... it might not be a big thing ... but if you all knew my track record in the kitchen, I am better staying OUT of it ROFL! I talked to a chow board members daughter before I even tried cooking on it, took her advice, and am doing fine so far. DH bot me a loud timer b4 I created a disaster LOL!!!

I love cooking with gas. It seems so much more friendly to the food than electric but with gas I prefer to use a lot of cast iron cookware.

But then you have to maintain the cast iron cookware and keep it seasoned. I would just coat it in vegetable oil and bake it in the oven on (I think) 450 degrees for forty five minutes? I am sure someone could Google the proper technique.

I have been without a kitchen now for three years. I had to rent out my home in order to avoid defaulting on my mortgage and I live in a "space" and am making due. It isn't as bad as it sounds, it used to be but I have been slowly making improvements to the "space".

Gas rocks but it can be worrysome. The meter outside my house always smells of gas. My house is older, I worry the pipes underground have rusted and the gas is leaking. I had someone come out and all they did was tighten a bolt or something and assure me that I wasn't paying for any of the gas that was leaking because it was on the other side of the meter :P

If you're looking for proper cookware to use with gas I think anything by Le Creuset can pretty much withstand everything. Viking cookware is easily ruined but they're generally the best.

I've used gas stoves, but kind-of prefer electric. Have lived in 2 different places over a period of maybe 6 1/2 years with gas stoves...It seems that cast-iron skillets are best for frying, etc. on gas, but you do need to season them ahead of time.
